BANANA BREAD WITH SAFFRON

MOIST BANANA BREAD WITH SAFFRON AND VANILLA
INGREdients

(4 servings)

  • 3 ripe bananas
  • 3 eggs
  • 200 g ProPud Protein Pudding Vanilla
  • 1 tsp vanilla powder
  • 1 tbsp honey or agave syrup
  • 2 dl almond flour
  • 2 dl oat flakes (ground into flour)
  • 2 ml measuring spoon salt
  • 0.5 g saffron
  • 2 tsp baking powder
  • A few chopped walnuts/cashew nuts (optional)

instructions

Preheat the oven to 175 oC. Beat the eggs. Mash 2.5 bananas (save one half to put on top) with the vanilla pudding, almond flour, oats (ground into flour), baking powder, vanilla powder, honey/agave syrup, nuts if desired, saffron and salt. Whisk for a while. Line a bread tin with baking paper and add the batter. Top with sliced banana and a little flake salt. Cook in the lower part of the oven for approx. 45min.
